No strangers to the culinary world, Nadia and Armando both have blood lines that lead back to years of family restaurant ownership. Prior to meeting Nadia in 2012, Armando was working for Bianco at Pane Bianco. Although that was his first stint working for Bianco, the relationship was formed through his uncle who has worked for Bianco for over 20 years. Armando viewed Bianco as a mentor from the beginning and maximized every opportunity to learn from the legendary chef.
Nadia at the time was attending Cordon Bleu Culinary Academy with strong culinary aspirations. The two were married in 2015 and within a year birthed their first restaurant, Taco Chiwas in Phoenix. The two immediately began applying all the knowledge and experience they had gained to fuel their passion and success. The restaurant gained national attention when Buzzfeed (LINK) named Taco Chiwas the most popular taco spot in Arizona in their national most popular taco spots in the country feature. In early 2018 they captured the national spotlight once again on Guy Fieri’s Diners Drive-Ins and Dives.
In early 2017 when Armando was approached about taking over a vacant building that was once Roland’s Market constructed in 1917 and replicating his success from Taco Chiwas, It came as no surprise that Armando’s first call was to his longtime mentor Chris Bianco. This time the roles had shifted and Armando was presenting his mentor with an opportunity to collaborate. The collaboration resulted in a new partnership between the trio and the opening of Roland’s Café Market Bar in 2018.
While Bianco’s legacy roots back to 1988, his accomplishments continue to evolve as he grooms the next generation of culinary leaders. The James Beard Award Winning Chef, takes pride in ”empowering young people” as he puts it, and sharing his wisdom and leadership.
Like a true leader, Bianco believes in investing in people and equipping them for success. He understands the connection of internal leadership development and how it leads to a greater customer experience. His passion for people is demonstrated in his ability to understand whatever size his circle of influence may be today, if he continues to work to improve as a leader, that circle of influence will enlarge.
Each of his restaurants amplify a feeling of community and his vision for Roland’s is no different.
